Simple Grilled Salmon
4 – 1/2 pounds salmon fillets1/2 teaspoon lemon pepper
1/2 teaspoon diced or pressed garlic
1/3 cup soy sauce
1/3 cup honey
1/3 cup water
1/4 cup extra virgin olive oil
salt to taste

- Stir together everything well except the fish
- Put sauce and fish into a large zipper storage bag, turning a few times to coat the fish well
- Refrigerate for 2-4 hours
- Heat your gas grill to medium (or get wood or charcoal grill to a medium fire)
- Grease grill grate or use non-stick fish grate or basket
- Place marinated fish onto grill or into basket
- Cook 6-8 minutes per side, or until just flaky, marinating with additional sauce while cooking

Apricot-Almond Salmon
This simple and delicious salmon recipe was adapted from the New England food blog, Savoring the Thyme.Ingredients:
3/4 cup apricot preserves
1/4 cup reduced sodium soy sauce
1/4 teaspoon garlic powder
1/8 teaspoon each salt and ground black pepper
1/2 cup whole or 1/3 cup slivered almonds
4 fresh salmon filets (5-6 oz each)
Directions:
- Place the almonds into a plastic zipper bag and crush them with a rolling pin or the back of a large spoon
- In a small bowl, whisk together the preserves, soy sauce, garlic, salt, pepper and almonds
- Place the salmon in the bag with the seasonings and toss gently
- Place the bag flat in the refrigerator for a minimum of 30 minutes
- Preheat the oven to 350 degrees
- Spray a baking dish with cooking spray and place the salmon filets flat in the dish
- Set the marinade aside
- Bake the fish for 20 minutes or so until cooked
- Remove the salmon from the oven and place on a platter
- Pour the marinade from the storage bag into a small saucepan, bring to a gentle boil, stirring constantly for about 2-3 minutes
- Pour over the salmon and enjoy
What to Serve with Salmon
Salmon goes well with a crisp green salad and hot crusty garlic bread. Or consider creating a seafood feast by combining grilled salmon with lobster tail and a spicy shrimp dish. Add corn on the cob, potatoes and a couple of desserts, and you have a party in the making.
