Remove a tortilla from the wrap and place a piece of lettuce inside. Add about 1/4-cup of the tofu mixture inside, two tbsp. of chopped tomatoes and crumble a strip of bacon on top.
Roll the tortilla closed from one side. When you've reached the middle, turn the ends in to cover the filling. Continue to roll the tortilla until it is entirely enclosed. Wrap the tortillas in plastic and place them in the fridge until you are ready to serve them.

To make this sumptuous recipe, place eight ounces of tofu; 1/2 cup of water; one tsp. of sweetener, such as molasses or maple syrup; 1/2 tsp. of spicy, fragrant cinnamon and one banana into a blender.
Process the mixture until it is smooth. Pour the blended mixture into a pan and dip slices of whole wheat bread inside until they are completely covered with the tasty combination. Fry the bread in a pan until they are golden brown. Top this delicious tofu breakfast with maple syrup, powdered sugar or your favorite French toast accompaniment.
