For easier eating, the rib is often cut away and sold boneless. There are a variety of ways for cooking center cut boneless pork chops depending on your time and tastes.

The easiest way to cook center cut boneless pork chops is on the gas grill. Preheat the grill on high for ten minutes while you season both sides of the chops with salt and pepper and a little oil. Place them on the grill and cook for 2-4 minutes until the meat changes color about a quarter of the way up on the grilled side.

Preheat the over to 350 degrees while you coat both sides of the chops with oil and season with your favorite seasonings – dried sage, rosemary and thyme is a good choice. Place the chops in a baking dish, cover the dish tightly with foil and bake for 35 minutes until the internal temperature is 145 degrees for medium or 160 degrees for well done. As always, let the chops rest before serving.
