Tofu is a great ingredient to add to most any dish; however, it is very popular for breakfast. Many vegans use tofu instead of the egg component and others add it simply for its taste and nutritional value. If you are looking for a way to introduce tofu into your diet, a tofu breakfast is a good start.

Vegan tofu guacamole wraps are tasty, healthy and a offer hardy way start to the day. To begin, wrap four 10-inch tortillas together in aluminum foil and place them in a 400-degree oven for about five minutes or until they are soft. Fry a few pieces of regular bacon or vegan bacon in oil. Cook until the vegan bacon is nice and crispy.

Slice two medium, ripe Haas avocados and remove the rich flesh from its shells. Place the avocado in a large bowl and combine it with 1/4 cup of minced red onion, two tbsp. of freshly-squeezed lime juice, one finely chopped canned chipotle, 3/4 tsp. of salt and 1/4 tsp. of ground cumin to make the guacamole. Use a fork to mash the ingredients together, until it is thick, creamy and well-combined. Add 1/2 lb. of tofu that is cut into a 1/4-inch dice.

Remove a tortilla from the wrap and place a piece of lettuce inside. Add about 1/4-cup of the tofu mixture inside, two tbsp. of chopped tomatoes and crumble a strip of bacon on top.

Roll the tortilla closed from one side. When you’ve reached the middle, turn the ends in to cover the filling. Continue to roll the tortilla until it is entirely enclosed. Wrap the tortillas in plastic and place them in the fridge until you are ready to serve them.

Before or not, tofu can be used in sweet preparations, as well. For instance, tofu can add protein, vitamins and texture to french toast. To make this sumptuous recipe, place eight ounces of tofu; 1/2 cup of water; one tsp. of sweetener, such as molasses or maple syrup; 1/2 tsp. of spicy, fragrant cinnamon and one banana into a blender.

Process the mixture until it is smooth. Pour the blended mixture into a pan and dip slices of whole wheat bread inside until they are completely covered with the tasty combination. Fry the bread in a pan until they are golden brown. Top this delicious tofu breakfast with maple syrup, powdered sugar or your favorite French toast accompaniment. 

Tofu scrambles are easy to make and even easier to devour. Make this tasty tofu breakfast by slicing one block of drained and pressed tofu into one-inch cubes. Use your hands or a fork to crumble the product.

In a hot pan, saute 1/2 each of a green pepper and yellow onion that is chopped, along with the tofu in two tsp. or oil or margarine for about three to five minutes. Then add one tsp. each of onion and garlic powders, 1/2 tsp. dried parsley, one tbsp. soy sauce and two tbsp. nutritional yeast. Add 1/2 tsp. of tumeric, if desired and cook for an additional five to seven minutes, stirring frequently. Eat this tasty scramble as is or serve inside warm tortillas.
